Dry fruits Laadu / Antina Unde / Dink Laddu


Ingredients:




1 cup jaggery
1/2 cup dry Grated coconut
4 tea spns ghee
1/4 tea spn nutmeg powder(Jaayi Kai)
1/4 tea spn cardamom powder
1 date cut into tiny pieces
1 tbsp raisins
1 tbsp edible gum(dink/antu)
2 tbsp cashews chopped into small pieces
2 tbsp walnuts chopped into small pieces
2 tbsp almonds chopped into small pieces
2 tbsp poppy seeds (Gasagase)




Method:
Dry roast Grated coconut till it tuns brown. Take it out and keep aside.
Heat ghee and add edible gum(Antu). The gum puffs up like small balloons take out and keep in a bowl, leaving behind remaining ghee in the pan. Add the chopped cashews, almonds and walnuts, until they turn brown. Add poppy seeds and fry till they pop.
Now, add raisins and dates and fry for few moments. Take out on same bowl.
Boil 1/2 cup water, add jaggery and cook till it forms syrup. To know whether the syrup is done, take 1/2 cup of water and put a drop of syrup in it, if it sits like a crystal( without spreading in water) syrup is done.
Add all the fried ingredients and mix well in bowl. Add nutmeg and cardamom powder. Mix well.

Now add jaggery syrup to the mixture and make laddu when it is still warm. If syrup get cooled then reheat it to get its consistency.
